    Assam is one of the East Indian States. It is basically famous for it's unique cooking style of fermenting, frying and drying the food items. Assame cuisines are rich and make abundant usage of Rice, green vegetables, green leafy veggies, herbs, fresh fruits, fish and meat. To add a different aroma and exotic flavors to the delicacies Assame people make a high usage of fresh & dried fruits, herbs and spices. A special kind of Rice dish is prepared in this state known as ‘Pithas’. These Pithas further have different types such as Tora Pitha, Gila Pitha, Tekli Pitha, Til Pitha, Sunga Pitha and Kholasapori Pitha. Green Bamboo is also an important ingredient of these delicacies along with the Rice. Assame people truly love to eat fish and in fact make many kinds of fish dishes in their daily and festive cuisines. One such very famous fish delicacy is ‘Tanga Fish’ also known as Sour fish. This dish is highly sour in flavor and this is done by using a high amount of tomatoes, lemon and mangosteen, this cuisine is rich in a gravy that is prepared either from the bottle gourd or by using spinach, especially the mustard oil is used to fry the fish. ‘Poibhaat’ is a dish prepared from boiled rice and served with mustard oil, chilli, pitika, onion and pickles. This is supposed to be a very light meal but much liked by the people. ‘Khar’ a traditional Cuisine of Assam prepared by burning the cover of the banana till it turns into an ash form then this ash is filtered through water and finally the filtered ash water is cooked with different food items like, fish, papaya, bottle gourd or rice. ‘Aloo Pitika’ a very delicious cuisine of Asaam made up of mashed potatoes mixed with chilies, onion and mustard oil. Aloo Pitika is usually served with boiled rice and curry based delicacies. Assame people love to consume pickles and chutneys in the daily meals. Herbal tea, cardamom tea and ginger tea are few of the popular beverages.
