Carrot Cake Recipe

    Ingredients
    1 ½ cups sugar
    1 cup vegetable oil
    3 eggs
    2 cups flour
    1 ½ tsp ground cinnamon
    1 tsp baking soda
    1 tsp vanilla
    ¼ tsp ground nutmeg
    3 cups grated carrots
    1 cup coarsely chopped walnuts (optional)

    Method
    Heat oven to 180 degrees C. Grease and flour a rectangular pan, 13X9X2 inches. You can also use a 9” round or a square tin. Mix sugar, oil and eggs until blended. Beat for a minute. Stir in remaining ingredients except carrots and nuts. Beat for a minute again. Now stir in carrots and nuts.
    Pour the mixture into a pan. Bake for about 40-45 minutes or until a toothpick inserted in centre of the cake comes out clean.

    Try this cake with a bottle of Chenin Blanc from Sula... Sula's wine tastes really nice with this cake
